Historien om &#8220;Stiftskulinarium&#8221;, som det kaldes i dag, er en afspejling af den evolution\u00e6re udvikling af gastronomien. Denne institution er ikke kun en kulturel institution, men er ogs\u00e5 t\u00e6t sammenv\u00e6vet med sociale fremskridt. Det er historisk dokumenteret, at k\u00e6lderen fik officiel tilladelse til at servere \u00f8l i 1803 og p\u00e5 det tidspunkt havde etableret sig som en vinbar, hvor der kun blev serveret vin produceret af munkene. Gad vide, om der allerede dengang fandtes menuer og drinkskort? &#8220;Stiftskulinarium&#8221; konkurrerer om titlen som den \u00e6ldste kro med bl.a. &#8220;R\u00f6hrl&#8221; i Eilsbrunn i Tyskland, som har v\u00e6ret drevet af den samme familie siden 1638. Det oprindeligt jordn\u00e6re k\u00f8kken i St. Peter Stiftskeller har udviklet sig til et m\u00f8dested for gourmeter. Moderne cateringkoncepter og internationale k\u00f8kkener konkurrerer med traditionelle v\u00e6rtshuse, hvilket f\u00f8rer til et fald i investeringer, innovation og i sidste ende g\u00e6ster. Resultatet er, at antallet af pubber hele tiden falder.<\/p>\n<h2>G\u00e6stfrihedens dyd<\/h2>\n<p>Men kroernes oprindelige funktion, at tilbyde rejsende overnatning (hvordan s\u00e5 hotelmapperne ud dengang?) og mad og at fungere som steder for g\u00e6stfrihed og udveksling, er stadig en tradition, der er v\u00e6rd at bevare. Folk fra alle samfundslag, fra storb\u00f8nder til borgmestre, m\u00f8dtes ved stambordet og traf beslutninger af politisk betydning. Kroer blev centrale sociale m\u00f8desteder i landomr\u00e5derne, hvor klubber og hold samledes. F\u00f8lelsen af at v\u00e6re &#8220;hjemme&#8221; p\u00e5 kroen understreger det t\u00e6tte f\u00e6llesskab. V\u00e6rten, som er central for sammenkomsten, dyrker g\u00e6stfriheden og driver sin forretning med charme og erfaring. Mange kroer, som ofte har v\u00e6ret familieejede i generationer, st\u00e5r over for et problem med manglende generationsskifte. Kroer, der tilbyder regionale og traditionelle retter, kan f\u00e5 \u00f8konomisk st\u00f8tte. I Wien organiserer handelskammeret en imagekampagne for at \u00f8ge bevidstheden. I andre regioner engagerer borgerne sig selv, f.eks. i Hochneukirchen i Bucklige Welt i Nieder\u00f6sterreich, hvor der blev oprettet et kooperativ for at gen\u00e5bne den gamle kro i landsbyen, &#8220;s&#8217;Hutwisch&#8221;. Beboerne kunne blive aktion\u00e6rer for 150 euro, og kort tid efter at initiativet blev lanceret, blev kroen gen\u00e5bnet med succes.  <\/p>\n<h2><strong>Mindre, men p\u00e6nt, tak<\/strong><\/h2>\n<p>Der er et andet \u00f8nske til moderne g\u00e6ster: De skal bev\u00e6ge sig v\u00e6k fra presset fra store portioner. Sm\u00e5 portioner i traditionel stil giver feinschmeckere mulighed for at nyde flere retter, ligesom ved fine dining. Det svarer til en moderne forst\u00e5else og kunne v\u00e6re et hul i markedet.  <\/p>\n<h2>Konklusion<\/h2>\n<p>Den \u00f8strigske pubkultur, der konfronteres med sociale og \u00f8konomiske forandringer, bevarer sin dybe betydning for identitet og f\u00e6llesskab p\u00e5 trods af udfordringer. Initiativer til at bevare og tilpasse sig moderne behov viser traditionens vitalitet og behovet for at forts\u00e6tte den.
